THE BREWERY

WAYWARD LANE BREWING

Besides just making fantastic beer, we are also experimenting and pushing the craft industry through our companionship with the farm that we reside on.  Our brewery and tasting room operate out of a beautifully restored 1800’s hop house, with a sizable outdoor space for customers, a concert stage, and scenic rolling hills and views of the Schoharie Valley.  We are also in our third year of cultivating a permaculture style, non-chemical, mixed fruit orchard.  We employ experimental methods like spraying our fruit trees with whey instead of fungicide, we use hardwood chips, composted manure, mushroom spawn and living mulch to fertilize and keep down weed pressure, and more.  We are also a beekeeping farm with 80 thriving beehives, as well as free ranging chickens and soon will be adding pigs to the system.  The point of this is to demonstrate how a brewery and farm can fit together as a full circle, with inputs and outputs being done sustainably; improving the land, soil and animals within the system.  The mixed fruit and honey produced on farm, as well as other farmed or foraged ingredients are used in our special long term aged NY wild ales, that rest in oak barrels and are bottle conditioned on the honey before being released.  The spent mash from the brewery will go towards feeding our animals, the animals will then fertilize our plants, which will then be used to make beer.  Our goal is to continue to learn, grow, and hopefully inspire others while we strive towards our vision of becoming a true destination in Upstate New York.
